Maple Classification
Classes and Colour: Offered in 4 colour classes: Golden, Amber, Dark and Very Dark. Grade A classifications are carefully selected by our master sugar maker for their delicate, pure and authentic maple flavour profile. Processing Grade: Specifically created for food ingredient markets, processing grade has a natural stronger flavour than Grade A.
There are four classes of Category A maple syrup: Golden, Delicate Taste, Ambe,r Rich Taste, Dark, Robust Taste, and Very Dark, Strong taste. In general, lighter syrups will have a more delicate and gentle taste, whereas darker syrups will have a stronger, more pronounced taste. This colour variance happens naturally and depends on whether the sap was harvested at the beginning, or end of the season. We respect the natural maple syrup process – there are no artifical colours added to our products.

Taste and flavour: delicate and subtle
Enjoy subtle flavours of delicate florals and vanilla, with fruit and nut aromas. One teaspoon will add a subtle, yet defined taste of maple flavour to your favourite recipes. We recommend using golden syrups to lightly infuse your meals, or desserts with this incomparable flavour.

Amber, rich taste

Color: 50% – 74.9%

Dark, robust taste

Taste and flavour: for the true maple syrup afficianado
Known as the favourite of maple syrup producers, the dark variety offers a strong maple flavour, with undertones of toffee, and rich coffee. This type of maple syrup tends to leave slightly bitter notes as an aftertaste.
TRY IT WITH: oatmeal, chicken stir-fry, or to sweeten your cup of morning coffee. Perfect as a table syrup, or for cooking of all kinds.
Very dark, strong taste
Produced at the end of the season
Color: 0% - 24.9%
Taste and flavour: earthy; good for cooking purposes
Produced at the end of the season, very dark syrups display the most pronounced flavour, with hints of black coffee, chocolate, toasted nuts, and molasses. Just like the dark syrups, very dark syrups also tend to leave slightly bitter notes in the aftertaste.
Very dark syrups are most useful when a strong maple taste is needed to counterbalance other strong flavours in your favourite recipes. It is not recommended for use as a table syrup.

How maple syrup is produced
The sap used to produce maple syrup comes from two species of maple trees; the sugar maple (80% of production) and the red or soft maple (20% of production) Forty litres of maple sap are needed to produce just one litre of pure maple syrup. The harvesting of maple sap takes place every year in March and April, over an approximate six week time span. On average, each sugar maple tree produces one litre of maple syrup per year, making it a precious commodity!
