Coarsely grind the spices in a coffee grinder, a pepper mill, or with a mortar and pestle. Mix the spices, maple flakes, salt and pepper together on a plate. Rub the salmon filets in the mixture and set aside for a few minutes to allow the flavours to mingle.
Heat oil in a non-stick pan and sear the filets 1 minute each side. Bake in the oven for 5 to 8 minutes. The centre should still be pink when done.
