Spiced-Crusted Salmon Filets with Maple Flakes

Spiced-Crusted Salmon Filets with Maple Flakes

Ingredients

  • 3 Tbsp mustard seeds
  • 2 Tbsp
  • ½ tsp crushed peppercorns
  • 2 Tbsp olive oil
  • 3 Tbsp coriander seeds
  • 2 tsp sea salt
  • Four 150 g salmon filets

Directions

  • Preheat oven to 450°F.
  • Coarsely grind the spices in a coffee grinder, a pepper mill, or with a mortar and pestle. Mix the spices, maple flakes, salt and pepper together on a plate. Rub the salmon filets in the mixture and set aside for a few minutes to allow the flavours to mingle.
  • Heat oil in a non-stick pan and sear the filets 1 minute each side. Bake in the oven for 5 to 8 minutes. The centre should still be pink when done.
