Mix all the ingredients quickly until the dough holds together. Form into a ball, flatten slightly and refrigerate for 30 minutes.
Instructions for Maple Sugar Filling
Mix the sugar and potato starch. Add all the ingredients in a blender and blend until whipped cream consistency. Roll the dough out, place it in an 8 inches (20 cm) pie pan, and trim off the excess. Pour the maple sugar mixture into the pie shell.
Bake at 400º F (200º C) for 10 minutes, then reduce temperature to 375º F (190º C) continue to bake for another 15 to 20 minutes.
