Maple Sugar Pie

Maple Sugar Pie


Pastry Dough

  • 1 ¼ cups (150 g) flour
  • ¼ cup (60 g) butter, softened
  • 1 to 2 tsp cold water
  • 1 egg
  • 2 Tbsp (15 g) 100% Pure Maple Flakes
  • A pinch of salt

Maple Sugar Filling

  • 1 ½ cups (250 g) 100% Pure Maple Flakes
  • ¼ cup (30 g) potato starch
  • ¼ cup (60 ml) milk
  • 1 ¼ cups (310 ml) 35% cream
  • A pinch of salt


  • Instructions for Pastry Dough

    Mix all the ingredients quickly until the dough holds together. Form into a ball, flatten slightly and refrigerate for 30 minutes.
  • Instructions for Maple Sugar Filling

    Mix the sugar and potato starch. Add all the ingredients in a blender and blend until whipped cream consistency. Roll the dough out, place it in an 8 inches (20 cm) pie pan, and trim off the excess. Pour the maple sugar mixture into the pie shell.
  • Bake at 400º F (200º C) for 10 minutes, then reduce temperature to 375º F (190º C) continue to bake for another 15 to 20 minutes.
